Mango Melba Shortcake
If Dame Nellie Melba had known about mangos, she would have asked Chef Escoffier to make the dessert with this luscious tropical fruit instead of peaches... well, at least we think so!
In a small sauce pan, over low heat, heat the jam until syrupy. Fold in mango chunks and remove from heat.
Split biscuits in half, spread whipped cream on the bottom half and fill with mango mixture.
Top with a scoop of ice cream.
